Ingredients
2 cups of sprouted Mung or Adzuki beans (sprouted 3 to 4 days)
1 large tomato (chopped)
2 green onions (chopped) or 2 Tablespoons onion sprouts (see sprouting instructions)
1/3 cup chopped cilantro
½ jalapeno (chopped and seeded)
3 tablespoon lemon juice
1 tablespoon dried mint
1 teaspoon ground cumin
½ teaspoon cayenne pepper
sea salt (to taste)
Recipe Directions
In a large bowl mix the bean sprouts with the other ingredients. Serve immediately.

By Sprout ChicThis popular Indians dish is spicy and crunchy. It is often served on a banana leaf on the streets of India. It is very similar to salsa. I eat it with crackers made out of flax seed.
