Umeboshi Plum Paste Salad Dressing

So I am pretty much a low fat raw foodist, but when it comes to salads, I just won't eat them without some kind of oil. Also I had some umeboshi plum paste that is rarely used in recipes unless you create your own so I did. The paste itself, for those of you who have never used it, is very flavorful. It's salty so you don't need much at all, and tart, it adds ZING. This dressing was enough to dress 1 salad so i eyeballed the ingredients like i always would put oil on my salad so im sorry i dont have exactness but it was a pretty big salad! VEGGIE PULP SALSA ay ay ay!

Don't want to waste perfect good morning juice pulp? Have ingredients that you don't know what to do with? MAKE SALSA! I have been experimenting with the pulp of my morning smoothies. The combinations of this recipe are endless so have fun! I put it on veggie pulp crackers that i made with pulp and sprouted wheatberries and rejuvelac.
P.s. please forgive me on the lack of measurements but the good news is it's only salsa, keep tasting until you get it right!

Other variations I am waiting to try-
mint with all fruit pulp and cilantro and cinnamon or nutmeg or cardamon or all 3 and processing with whole mango or pineapple
add avocado for a little guac-salsa in one feeling
add corn for corn salsa...
add sundried tomatoes...
