I'm not a big raw soup eater, but when I bought 3 heads of cauliflower for green popcorn at Trader Joe's this afternoon, the clerk asked if I was making soup. Hmmm, cauliflower soup sure sounds good, particularly since it was 12 degrees outside today! This recipe is inspired by one found on Rhio's site. I didn't have soaked almond to make almond milk, so I used almond butter. Ialso added garnishes for a special touch. No picture... I no longer have a digital camera but I'm in the market, so if anyone has a good reco (under $120), let's hear it.

I was inspired by Martha Stewart's spinach & mushroom soup she made the other day on her show... She served it over Buckwheat Noodles and it wasn't Italian in flavor.. Her recipe contained shallots, garlic, (butter or EVOO, not sure which), Chicken stock with the mushrooms and spinach... It of course was cooked and not Vegan...
This savory smoothie or soup is VERY warming and REALLY high in antioxidant and anti-inflammatory power! Plus, it boasts a lot of taste complexity and it was quick and easy to make. I didn't take a picture because - guess what? It looks like a green smoothie!
