My favourite meal as a child was mashed bananas with custard which is perhaps why I enjoy this dish so much.
These proportions with do for a small snack but double the amounts if you're hungry.
Takes a few days to get the spelt berries ready, but it's soooo worth it! This is a nut-free version of banana bread, using sprouted grain berries as the base! YAY! You could also add some walnuts or pecans and some raisins, if you wanted to! Can't remember what real banana bread tastes like exactly, but this works great for me! The first time I made this, I didn't use the vanilla, but I think i will next time just to give it some more depth.
I found this recipe on a forum somewhere while looking for a nut-free recipe for raw cheesecake. It could easily be made nut-free, all you have to do is either leave the crust out, or make your own nut-free crust! The filling has NO nuts!!!
Bunches of bananas all ripen at the same time so I like to peel the extras and place them in a zip type bag, seal & freeze them for my smoothies
I sized this portion to mix in my little ‘Magic Bullet’ blender. It really has turned out to be quite useful. Use any nut, soy, or other milk you prefer. Some folks prefer a bit of water and less milk. Note that this does contain dairy in the form of whey protein, which is great for maintaining or building muscle, also if you’re consciously losing weight.
