i created this recipe out of a need for something green for dessert for Christmas eve dinner. turns out this was the perfect idea! tasty, quick and easy as pie!
Nori Rolls with Cauliflower Rice and Dipping Sauce
One of my favourite non-raw snacks is the Iku Wholefoods 'Nori Roll' with brown rice.
The following recipe was my first attempt to recreate as I love the flavours so much - salty, spicy, sour, etc.
I added the dipping sauce to the cauliflower rice, which tastes great, but perhaps made the nori filling a little soggier than I would have preferred. Perhaps just add 1/2 and save 1/2 to dip!
This yielded enough to fill 6 nori sheets which I cut in half. These are best eaten within an hour.
The mixture (rice and dressing) could sit to marinate for a while and then be stuffed into lettuce/cabbage leaves.
Oat-less Oatmeal
I like to eat this for breakfast when the weather cools down. It may be misleading to call this oatmeal but, for me, it has the same warm and comforting flavor.
Peppered Pineapple & Cucumber Salad
This is a quick simple salad for those of you with a sweet tooth. Choose a nice ripe pineapple. Look for one that is yellower on the outside and smells fragrant. If it’s still quite green it will be tart and can burn your mouth. Unfortunately most fruit we buy from the supermarket is picked before is has fully ripened to extend the shelf life. However, you can sit your pineapple on the shelf for a few days to ripen if there are no ripe ones available. Eating fully ripened fruit is important. The fruit has properly developed and has just the right amount of enzymes to help you to digest it properly.
