Chocolate & Orange Mousse Cakes
I created this dessert specially for a recent raw food demonstration and lunch. My guinea pigs loved it! They were even more amazed to try a dessert made from avocado. This healthy fruit, rich in natural oils gives a perfect way to make an easy raw-vegan mousse. I combined it with a crunchy buckwheat base to provide a rich, smooth couple-of-bite-size desserts. It is my ultimate raw food dessert...I can't imagine why you would ever want to eat a non-raw pudding when you could have this!

Strawberry, Coconut & Carob Stack!
Providing you've got some buckwheaties (instructions can be found on my website), this dish is really quick to prepare: It took me about 30 minutes. It looks pretty awesome for the short preparation needed…tastes fabulous too – the coconut water in the sauce gives it an extra creaminess.
On top of that it's only got 5 ingredients in total and there are no processed or concentrated sugars. Simple, quick and tasty…now that's how I like my raw desserts!
