Light Recipes

I personally think that this mimicks the texture of tuna better than any other recipe. I love it so much that it’s my tuna replacement even when I’m not eating raw. Really, the only part of this that’s my own idea is grating the jicama, the rest is up to you. I like it on its own or on a slice of manna bread.

This is a pretty simple recipe… it’s so simple I almost feel like I’m wronging you by calling it a recipe. I had the spices around the house and always have flax seed. + I LOVE avocados. This Avocado-Flax love concoction idea sprouted after I found this simple-flaxy-love idea: http://www.goneraw.com/recipes/3593-easy-flax-grated-cheese-

Enjoy! :)

These are really small, two-bites pizzas that are fresh and yummy. I only made 8 using a small zuchini, but just increase the other ingredients to your preference. I also experimented with sun dried tomatoes, mushrooms, and a little salt/pepper but I prefered the simple pizzas best. Enjoy!

These sweet, summery ingredients make for a perfect light lunch or dinner!

I made this cake today and it turned out very delicious! I like it, because it’s not all nuts, like in a lot of recepies. If you like you can add some raisins to the batter of the cake, but I didn’t have that, so I omitted. You can decorate the cake with grated coconut, raisins, bananas or any seeds.

This is a heavenly sweet and creamy smoothie for hot summer days.

the best part about raw food for me is tasting all these new flavors, unheard of in the realm of the COOKED. i was making a chili sauce and added a little too much cinnamon… loved the result! it’s VERY interesting.

this stuff is an AMAZING spread. because of the fennel and tomato it is reminiscent of tomato-fennel sausages, but the consistency is that of a light guacamole.

Add Celery, Apple and Walnuts, Raisins or Dried Apricots and LOTS of Greens! So refreshing! Most of the stuff we raw foodists have around all the time. No Appliances Necessary!

Jicama is fantastic all alone – in this salad, it is something quite special.

This salad keeps me going for ages. Very taste, low-fat and filling.

Delicious stuffed mushrooms with all kinds of goodness inside. Can be eaten as a main meal, with a salad or as an entree

this is super refreshing and pretty. no appliances—completely unplugged.

They are really good, and they are sooo easy! Something very light, refreshing and quick to prepare for the summer or anytime. We make the tacos when were in need of something fast and it tastes better than real tacos! NO PRE-PREPORATION OR DEHYDRATING NEEDED

This past weekend I made Russel Jame’s wilted kale salad from this website and it was lovely. He uses 2 Tablespoons of salt to wilt the kale but I only used a fraction of that amount. I made this tonight and it’s the quick version of his salad with some modifications. I ripped up enough kale for my lunch tomorrow but made enough dressing for 3 days. Tomorrow night I’ll rip up more kale and cut up some veggies and use the dressing again. This seems great for mid week. Not too heavy but enough good stuff to get me through my work day!

I made this last night as I have many organic yams and nothing to do with them to have for lunch today at work, just finished and WOW! I did not expect it to be so good!! I made a sweet basil dressing inspired by Bonobo’s, I did not write it down or have exact amounts, i made it to taste, pretty much winged it. I found this one by Dr. Ben Kim which is similiar (i used much less oil and more water in my version, no pepper, agave instead of honey and i am certain Bononbo’s doesn’t contain garlic but i added a little to mine):

This delish soup will be sure to bring you some CHI! I created this because the kimchi I buy is spicy and irrates my sensitive throat. I really enjoy the taste of it though and had to find a way to “have my chi and eat it too”... so I decided to take cooling cucumber and creamy avocado and make it into a soup!

One of the most fantastic green smoothie ever! Here’s the recipe for those who want to experience the taste of orange and green mingled bliss…

Ever wonder what to do with your beautiful flowering squash blossoms? Stuff them!!! Enjoy some squash blossom burritos!

simple and filling. great for cold nights.

A raw version of Tabouli, replacing the bulgur wheat with buckwheat sprouts.

This is Karen Knowler’s recipe : http://karenknowler.typepad.com

But i wanted to share it because its the perfect pudding (or breakfast!) for the summer, as its made totally out of fruit! And it doesnt need added sweetner(s)! Plus It’s quick, easy, healthy and delicious!

Delicious tropical mix of mandarins, banana, papaya, mango, and coconut. Add pineapple if available. Best if organic.

i made this for the raw falafel recipe posted on this site. it went really well together. cawliflower makes a nice starch substitute i think. also, it gets better as it sits, so make more and eat leftovers if you like to have things on hand.

enjoy =)

This is a delicious Fat-Free alternative to Guac. I could eat my own weight in guacamole if left to my own devices and this is a lighter alternative.

Gaspacho_thumb

This is a summertime favorite, serve well chilled.

I call it a milkshake cause that’s what it reminds me of. Thick creamy and MMMM… Although it should be kept in mind that it has been five years since I had a “real” milkshake so… heheh, I’m sure a triple thick Rotten Ronnie fan would violently disagree!

light and refreshing

I fancied a satisfying low fat meal and this is what I came up with.

this is a refreshing mediterranean take on the old nut pates. japanese tomatoes are simply the juiciest on earth! although i havent tried heirloom yet. i love taking pictures of produce!

Jicama_couscous_thumb

This is inspired from Raw Food Real World’s couscous recipe. They use currants while I used tomatoes and added my own variations. It’s a nice summery recipe that is very filling and tasty. My picky husband really enjoyed this dinner and kept saying how much he liked it. I think the tomatoes and unique flavor of the almond oil made it lovely.

Zesty jalapenos with smooth cilantro create an authentic thai flavor. The dish can be garnished with chopped bell pepper, cilantro, and basil if desired.

Light refreshing cabbage with cucumber, carrot, jicama, pumpkin seeds, and almonds. Dressing is not necessary because there is so much flavour from the vegetables with a nice crunchy taste from the seeds. I am not one for lettuce, dressings, or salad, but I really enjoy this cabbage mixture. Enjoy!

After juice fasting for 50 days, I decided to start back eating. . . very slowly and carefully. It seemed that blending my food for a while would be easier on my system then actually eating it. So, I created this blended soup and was very pleased with the taste and texture. Use as much or little cayenne, herbs, and stevia as you like. Hey, use as much or little of any other ingredients you like. I’ll never know the difference!

I wanted some kind of taco that was simple and didn’t require me to run the food processor or blender, since the hubby was sleeping. This came out great. My hubby tried it and liked it, but I chopped everything up into taco salad for him. A nice quick and refreshing taco (or salad)!!!!

Like the stuff in the sushi bar. That stuff comes from a giant vat shipped from Asia, and has cooked oils and sugar, so your will be much fresher and healthier!

I usually prefer to cut fruit and eat it rather than drink smoothies. This may seem simple enough, but it seems to get overlooked. This makes a delicious breakfast and snack throughout the day. Other desired and seasonal fruit can be added. See my .tropical passion. if you like mango, papaya, mandarins, bananas, pineapple, and coconut.

Super yummy little burger with a bright red color.

Apple-y, gingery, lemony goodness.

Green-pear-smoothie_thumb

Fruity smoothie, great for breakfast or in-between meal snack.

For when you are craving the taste of pizza…

For those who want a quick drink without juicing, here’s a nice one using a blender. This smoothie is runny enough to be called juice without having to extract it by straining. It is very simple, yet so delicious and REFRESHING!

This started out as a red cabbage coleslaw with strawberries recipe, but i kept adding things to try to come up with every color of the rainbow. :)

Stuffedshrooms1small_thumb

I like meals that I can whip up really quick. I am using mushrooms in their plain, un-marinated state. The tangy kick from the filling is all the flavor you need in this dish. I say it serves one, but really my daughter and I shared this as a light snack. :) It took me less than 5 minutes to make. Enjoy!!

Strawberry_thumb

I also like to refer this to “strawberry water”, a perfect light summertime drink!

I would’ve never dreamed these could taste so amazing…they are supremely addicting! Plus, it’s a super way to greens into your diet. I could eat 3-4 bunches of kale straight this way! This is also a great movie snack or to make with kids!

This is very light and refreshing, perfect for hot days. It doesn’t give you that “headachey” feeling when you eat pasteurized lemonade with loads of sugar. One time in Starbucks, some guy poured sugar in his latte continuously for three minutes. I’m not kidding. So sad.

This is so refreshing, I made it ;last night when I had nothing else to eat. You’ll probablt going to eat all of it!

Wrap_thumb

Super simple, quick and easy, nutritious and delicious. What more can I say? The funny thing about this is I do not care for any of these items alone but together… together they are one of my favorite foods!

a tart drink, with all the fiber from the greens leftover. i find that green smoothies are a little too sweet for me and i don’t get much green “mileage” out of them. the play between the tart citrus and the sweet apple in this covers up the bitterness of the greens nicely. and a bonus is that it turns into a kind of frappe when you make it with spinach. ENJOY!

using the leftovers from natalia’s rose’s “green lemonade” (raw food detox diet book) to make a yummy low-oil dressing.

A nice lighter breakfast for the weekends or anytime. I use Alissa Cohen’s really raw oats and they are nice raw and amazing if you do cook them once in a while. This concoction is similar to my cooked version of oatmeal before I went raw. This raw version is perfect when having cravings for a good old fashioned bowl of oatmeal.

In my never-ending search for nut-free, seed-free, low/non-fat recipes, this recipe was inspired by juleskess’s Fat Free Guacamole! To me, this light and low/non-fat (if you use chia it is low-fat; if you don’t use chia it is non-fat) dish is a cross between refried beans, guacamole, and salsa. It even kinda reminds me of lentil stew. Sounds weird, I know, but it’s true.

Many of the ingredients are optional in this very versatile recipe. The beauty is in the texture and the ability to adapt it to your favorite tastes.

I ball parked the measurements. Use more or less to satisfy your desired texture and flavors. Hope you enjoy!

A simple blend of peach and celery (thanks to Dr. Doug Graham) makes a sweet/tart dressing for this salad with sliced peaches, tomatoes and celery with dandelion greens. It was very pretty (but consumed too quickly for a photo … next time I will add one). Very minimalist but tasty.

Salad_thumb

The most lovely, delicious summer salad ever! Great to eat while the tomatoes are glorious!!

Very mild and extremely refreshing green smoothie!

With today being my 47th day of a juice fast, I decided to share a new juice that I came up with in the last few days. Although most of my juices have been vegetable, this added a little variety to my routine. I mixed the lettuce with the fruits to be sure that I was still getting chlorophyll. The juice reminds me of something, I just can’t figure out what it is. If you can figure it out, I’d love to know. I think this would make a great punch.
