Banana Crepe
Serves 2-4
This is a decadent, delicious Sunday morning treat! Based on a recipe from a video by Alyssa Cohen (I was taking notes while watching, so this may be a bit of a variation).
Ingredients
- 5 bananas
- 1 cup macadamia nuts
- 1 cup cashews
- 1 teaspoon lemon juice
- 1 dash Nama Shoyu
- 1 teaspoon water, or more for consitency
- 1 cup blueberries
Preparation
- Start the morning before by making a banana crepe in the dehydrator. Blend 5-6 bananas and then spread the mix on 1 teflex sheet.
- Dehydrate 18-24 hours at 95 – 100°.
- Take your banana crepe out of the dehydrator and cut (should make about 6-8 crepes).
- Blend the nuts, lemon juice, brags and water to make a creme filling.
- Put some creme filling in the banana crepe and roll.
- Top with blended strawberries. Then, sprinkle with blueberries. A serving is likely 1-2 crepes.
You may want to wait a few minutes before serving to allow the strawberry sauce to soften the banana crepes. The crepes are also really good the next day if you leave it in the refrigerator with the strawberry sauce already on the crepes.

I have Cohen’s book with this recipe, and I gave it a try. I was a bit unsure, as the banana leather was very banana-y and sweet. But after leaving the crepes overnight to enjoy the next morning they were awesome! I didn’t have any macadamia nuts; I ended up using some cashew butter I had made and almond meal, and the taste and consistancy was still very yummy.

I need some clarification on this one. Do you add everything together and dehydrate? What is the creme filling? Thanks!

Oops, looks like I forgot to type a step in there! The creme filling is a mix of the nuts, lemon juice, soy and water. As far as dehydrating, you only need to dehydrate the bananas to make the crepe.

The crepes are so versatile. I blended 2 T of cashew butter, 1 T raw cacao, 1 T agave, cinnamon and 1/4 c. raw oats and put that in the crepe with chopped strawberries. My daughter loved it!

Tried it the other day and it is absoluntly amazing! I used almonds and pine nuts for the filling. And I went on Alissa’s site where you can look inside her book, one of the preview pages is of this recipe, she uses sweetner with the strawberries, I used dates. I ate nearly the whole 3 batches I made…

I made a huge batch from the recipe in Alissa’s book, and even my mom liked these. I ate banana crepes straight for two or three days and nothing else till they were gone, all self control thrown by the wayside! These are just like the real thing!

My crepes turned pretty dark brown as well, almost a maple syrup color, slightly transluscent but still yummy! This recipe was so delicious, even if my version wasn’t the prettiest!

I just pureed like 3 bananas in my Vita-Mix and the crepes are dehydrating right now…..Yay! So many things for my breakfast. I will use young coconut-almond milk based cream instead of macadamia-cashew based cream. It is lighter and less “nutty”. BeTheChange, what are you using in you cream filling? You forum posts say you are giving up nuts.
