Zesty Carrot Salad

I was in the mood for a carrot salad and this is what I came up with. It is quite tasty and very simple to make. I didn’t include measurements, so you can make as much or as little as you like.
Ingredients:
grated carrots
olive oil
agave syrup
lemon
juice
salt
pecans
Preparation:
1. I grated the carrots in the food processor, quick and easy.
2. Then I drizzled on the olive oil and agave and the juice of half a lemon and added salt. I tasted it and adjusted until it
was perfect. I wanted a sweet, tart, salty combination. I think a nice twist would be to sub orange juice for the lemon and add a little ginger. I think I’ll try that next time.
3. Top with raisins and pecans.

I made this for dinner, very tasty. I left out the salt, but added cinnamon and orange juice. It's marinating now, taste good, but maybe I should add the salt? It's missing something. Thanks for the quick and tasty receipe. I know I'll be making this often.

This is an impressive little salad. The sweet and lemony flavors play off each other nicely. I had to sub walnuts and dates, and it's really good.

I just love the way people modify the recipes here, it's just such a living thing!
I am going to try this with apple and pumpkin seeds. I might just go savory and curry it up a little...onion... hmmmm...:)

Hi Daniefon, I'm going to make this soon, seeing that i always have a ton of carrots for juicing.Lizzyrose, I like your suggestions, I'm going to go for it and going to add a granny smith apple...thanks beate64. I think I'll also replace the olive oil with walnut oil or flaxseed oil. I can't wait to try this.

I also suggest using orange juice and honey (I can't use agave) and cinnamon... it's my favorite!

I made this last night, though substituted sunflower seeds for the pecans. It was simple and fresh and yummy! Finished it for breakfast this morning!

Hey Danifon, good recipe :)) I did it a while ago and included a grated apple (better if sour), and pistachios instead of pecans, makes for nice colour :) the the next time I added zucchini linguine, a great combination.
I love this salad, makes actually for a nice refreshing breakfast :))
