Yucatan Salad

2 large servingsA local restaurant makes a version of this that I really like, however, they use sugar. I decided to copy (and improve!) it, this one is really great and simple to make.
Ingredients:
2 cup red cabbage, shredded
1 cup carrots, thinly sliced
1 cup cilantro, chopped
½ cup lime juice
½ cup olive oil
2 tablespoon agave syrup (or more to taste, dressing should be somewhat sweet)
sprinkle sea salt (to taste)
1
avocado, sliced
1 cucumber, sliced
1 cup jicama, cut into matchsticks
Preparation:
Mix cabbages, carrots, cilantro and jicama in a large bowl.
Mix lime juice, olive oil, agave and salt in a jar, shake it well.
Pour dressing over salad and mix well to coat all.
Serve topped with cucumber and avocado.

I made this several times and it's very creative, colorful and great. I started making it without the olive oil and I think it's just as good and cuts way down on the fat.
