Yes the new sunset magazine is here and they have done up the watermelon this month. Who knew watermelon could be pretentious and delicious as a salad?
½ cubed watermelon
½ cup pine nuts
1 cup chopped parsley
½ cup crumbled nut cheese(pepper cheese), or raw feta
1 tablespoon lemon juice
3 tablespoon oil of your choice
salt and pepper to taste(heavy on the pepper)
