Vietnamese Mung Bean Sprout Salad

This is something called “Gia Xao” I recently had at a Vietnamese restaurant I went to. It was so easy and refreshing, I decided to make it myself! Tastes great with a drop of hot chili sauce (the one with the rooster, unfortunately not raw)
Ingredients:
3 cup Mung bean sprouts
1 Green bell pepper, chopped
.33 cup Fresh cilantro
1
tablespoon Soy suace
1 tablespoon Olive Oil
1 Lime , squeezed to release juice
Preparation:
Toss sprouts, chopped green pepper, and cilantro in a bowl. In a small dish; add soysauce, olive oil, and juice of one lime while mixing. Pour dressing over salad, place in fridge for and hour before eating to soak in flavors, and Ä‚n nà o! (that’s Vietnamese for “enjoy!”)

Try some mint plus basil. I can't make my mungs grow long & fat.

Thai basil would work, too bad I'm out. Guess it is going on my list for this weekends farmers market!

Cant stand cilantro either. Mentioning basil, how about Thi (sp.?) basil?

I would think thai basil would be great, or kefir lime leaves.

What other green do you think might work, I can't stand cilantro.

i love mung beans - don't always know what to do with them, usually end up throwing them in my energy soup. but this looks like a tasty alternative. thanks for posting
