Sweet Purple Fungi

Soft little burgers that are great on their own, and would be nice on bread or in a wrap. There are some similar recipes already on the site, but I was particularly pleased at how the sauce to bind the burgers came out, being nut & seed-free. Also, they were very simple to make and didn't take much time. I only dehydrated for 1 hour, and they were soft & juicy, with just a bit of crunch on the outside. It was also really good before going in the dehydrator, so if you don't have one just press some on bread or pile on top of greens and eat away!

Thanks guys! The nutritional yeast is for flavour - so I would just add some extra salt & herbs or miso (if you do that) or some other flavouring. The psyllium husk is like a bran, doesn't have much flavour, just pretty bran-y. I just put it in to thicken the sauce so that the burgers hold together better. Flax does the same job, but I was feeling maxed out on flax. You could also try some oat bran or other types of bran you have available, or any other kind of thickener. I buy both in bulk at my grocery store.

What is Psyllium Husk and where could I get it? Does it have much flavor, or is it more of a binder?
