Servings:
Makes one large saladAfter indulging on far too many nut-based and dehydrated raw goodies, I found it time for a week of detox. This salad has become my very favorite fresh treat!
*Any stone fruit (plums are nice!) can be used in place of, or in addition to, the peaches and nectarines.
Ingredients:
2 cup mixed greens
¼ cup fresh cilantro
¼ cup fresh fennel, thinly
sliced
1 ear of fresh corn, cut from cob
2 fresh peaches (I used Saturn Peaches), Sliced
2 fresh apricots, sliced
1 cup green grapes, sliced in
half
½ lime, juiced
Preparation:
Add all ingredients to a large salad bowl. Squeeze lime juice over the top and gently toss to combine.
