Sunflower Hummus

I was trying to make sunflower pate, but that didn’t quite work out … so hummus it is! And I love the pic, you can see my 2 year old’s little fingers in there trying to snatch a carrot. :)
Ingredients:
2 cup sunflower seeds, soaked
15 baby carrots
1 zucchini
1 celery stalk
1 big bunch of cilantro
2 clove garlic
1 large lemon
2 tablespoon cumin
salt
flax seeds, [optional]
Preparation:
Process sunflower seeds, carrots, zucchini, celery, cilantro & garlic in food processor or blender until smooth.
Stir in the juice from the lemon, cumin & salt [to taste].
Let chill for a bit.
Before serving I stirred in more sunflower seeds, some flax seeds & topped with some minced cilantro.
My carrot snatchin’ 2 year old approved.

i made this today without the celery (was out of celery)
it's very good with spinach, kinda makes good "burrito" filling, might try it with lettuce. trying it as a burger as well. very tasty :)
