red "fennel sausage" guacamole

this stuff is an AMAZING spread. because of the fennel and tomato it is reminiscent of tomato-fennel sausages, but the consistency is that of a light guacamole.

Ingredients: 

1 avocado, scooped out of skin
5 sun-dried or dehydrated tomatoes, soaked, reserve liquid
1 tablespoon whole fennel seeds
½ teaspoon jalepeno pepper (more if you like spice!)
1 tablespoon fresh oregano
1 tablespoon any red curry powder
pinch ground pepper
pinch herbamare, or sea salt to taste
water as needed
1 squeeze of lemon juice
____ optional____
chopped onion
chopped fresh fennel

Preparation: 

place all ingredients in a food processor and blend, adding water as needed to make it nice and fluffy. adjust seasonings to your liking.

smear on lettuce or nappa cabbage leaves and top with bell pepper, sprouts, or even cauliflower couscous… maybe even a slice of avocado…

sorry no photo, but it basically just looks like dark orange guacamole. =)

WOW!!! This is FABULOUS! I'm not a big fan of nut pates and heavy "cheeze", so I usually just make basic guacamole when I want a spread -- but I'll make this again, and again and again... Thanks so much for this!

As soon as I saw this I knew it was dinner, these are flavors you don't get much in the raw world and I was CRAVING them - so I made it last night in a really big hurry... badly - wrong ingredients, not enough time to soak the tomatoes, and it was still good so it must be amazing when it's made properly! Thanks pianissima!

i got the idea from freshtopia where she made a taco "meat" with pumpkin seeds and sundried tomatoes and all these spices. then she put avocado on top. but i thought... i bet i could just do something similar straight INTO the avocado. i was trying to spruce it up and came upon some fennel seeds. my parents (who eat real sausage) loved it. when i said it tasted like sausage my dad said "i wouldn't go that far..." =)
