Real Ketchup

makes about 3 cupsthis is a very vibrant ketchup. We have been using this for spaghetti sauce. We just add a little water or some tomato juice. It has helped us through some of the transition since we have been putting this on regular noddles and we tried it on zucchini strips last night.Yum!
note: This will keep about 2 weeks in a glass jar.
Ingredients:
1 cup tomatos, chopped
1 cup sundried tomatoes, plus the oil
1 tablespoon garlic,
minced
2 tablespoon ginger, chopped
¼ cup onion, chopped
8 basil leaves
6 dates, pitted
¼
cup maple syurp
¼ cup olive oil
1 teaspoon salt
Preparation:
Put it all in a blender or a food processor and run till smooth.

I tried this as spaghetti sauce! Wonderful.

Also, I skipped the dates...

I don't see why not ItGirl. Agave sounds like it would work. I certainly wouldn't know the difference because this is very strong and not real sweet.
As for the "slight ketchup twang" Chris, honey its in there.

Where is the vinegar for that slight ketchup twang? I would use agave myself personally since maple is a distinct flavor.

One question, though: I don't really care for maple syrup...do you think I could substitute with agave, or do you think I should use something else?
