Rawtella
A raw version of Nutella, a delicious European chocolate-hazelnut spread.
NutellaŽ, in its original form, was first created in the 1940s by Mr. Pietro Ferrero, a pastry maker and founder of the Ferrero company. At the time, cocoa was in short supply because of rationing due to World War II, so chocolate was very limited. So Mr. Ferrero used hazelnuts, which are plentiful in the Piedmont region of Italy (northwest), to extend the chocolate supply.
Very yummy spread on a banana!
1 cup raw hazelnuts
2 tablespoon raw cocoa or carob powder
1 teaspoon vanilla
¼ teaspoon salt
1 tablespoon honey or agave nectar
1 tablespoon coconut oil
flax or nut oil
Food process raw hazelnuts for several minutes until clumpy and oily. Add cocoa/carob, vanilla, salt, coconut oil and honey/agave, and process until smooth. Stir in flax or nut oil until you reach desired consistency.
Quantities of cocoa/carob, vanilla, salt, sweetener, and oil may be adjusted to taste. This would undoubtedly work at least as well, and be a touch healthier, with nuts soaked overnight, but I was looking for instant gratification. (Having now tried it with soaked nuts – it works, but use it up fast, because it doesn’t hold the hazelnut flavor very long.)

2. I live in Monterey too and I
I live in Monterey too and I have to avoid looking at that crepe place every time I drive by, haha. I am new to raw and haven't been able to find much information about a raw foods community in the area. Do you know of anything?
3. So very tasty! I used a food
So very tasty! I used a food processor because I didn't feel like digging it all out of the Vitamix! I didn't need to add much oil, but I made sure to process the nuts for quite awhile (I need a more powerful FP)!!
I used this to make a delicious smoothie - recipe at http://www.goneraw.com/recipe/rawtella-dessert-smoothie.

There is a cafe in Bologna, Italy called La Nutelleria. It's a cafe that serves up everything Nutella - crepes, croissants, toast...it's awesome! Just... FYI! :)
6.
i'm sure it's tasty!!!
7.
This recipe is delicious...thank you, so much!! I was wondering, though, if this rawtella needs to be refrigerated or if it can stay out at room temp?
8.
I made this in my Vitamix. A little oily for me; I'd suggest not adding flax/nut oil unless you find it necessary to blend.
9.
I REALLY want to make this but the problem is that I don't have a food processor. I do have a vitamix though. Does anyone know if I can make this with my vitamix???????
Sobizaar- Even though I haven't made this yet I think having at least one of the oils would be needed to make it creamier in a way. Well, thats what I think.
10.
do you think it will still taste pretty good without the nut/flax oil or the coconut oil because i don't have either but i just bought hazelnuts for this so i wanna do it..
11.
yum yum yum! just finished making it. Had to add some water to get into a more spreadable consistency but didn't take away from the flavor at all!
12.

I would love this as I love all of the ingredients listed + had a little a love affair with Nutella itself when I visited Europe back '04.
Thanks!

Ooh fantastic, I was just thinking about how to make raw nutella the other day :)
16.
what a great idea... sounds like this what Nutella needs to be... and thanks for history side note
17.
I just made this, also without the flax and/or nut oil. It is delicious and truly satisfied my craving for something sweet and delicious.

This sounds great!!! I read in a raw food recipe book that you don't have to soak hazelnuts, because they don't have the enzyme inhibitors. This is also true for Brazil Nuts. Yay for raw Hazelnuts!

I just made this recipe :D Soooo yummy....sigh....I left out the flax/nut oil, cause I didn't have it, but it didn't seem like it was missing anything. It was SUPER DELISH!

I love this idea! Did you eat it on any particular cracker or food?

David and I like this one alot. We have a crepe place here in Monterey that puts nutella with bananas, coconut & whip creme. We will be adding it on top of bananas with shredded coconut.
Thnaks

We love Nutella and this is an even healthier version!! We soaked the nuts first and it was hard to pass up the instant gratification. LOL. Thanks!!
23.
I made this today and used raw almonds instead of the hazelnuts because that was all I had. It is sooo good !!!! I will get some raw hazelnuts soon and make a batch of this. I wonder if this would be a good base for a raw chocolate dessert. A crust maybe? Or could this be made in to some sort of raw cookie, bar?

I miss Nutella, too, but thanks to this recipe, I can enjoy something better :-)

Yummy! I miss nutella. We haven't used it in years due to the hydrogenated oils in it. I am so happy to find a replacement!

I hadn't seen the rawguru version before making this! I'm amused that we came up with the same name and all (my housemate is responsible for the name on mine).
