Delicious soup from Food & Wine’s June article by Ani!
3¼ cup fresh corn, cut from cob
2 cup water
½ cup raw cashews
6 tablespoon olive oil
1 small garlic clove
2 teaspoon celtic salt
1½ teaspoon cilantro chopped
Combine 2.25 cups of corn with water, cashew, olive oil garlic and salt and puree. Pour soup into bowls. Garnish with remainign 1 cup corn, cilantro and pepper.
I am making this tonight, I will let you know how it turns out!!!

can you tell me how many stalks of corn you needed to get to 3 1/4 cups? thanks!
