Pecan Cinnamon "Oat"meal

Pecan Cinnamon "Oat"meal

A great version of breakfast oatmeal! Not at all oat-ey, but definitely satisfying with warm flavors of pecans, with the cinnamon and banana—YUM! I only had so many items in my kitchen this morning and got creative. I’m so happy I did, this is so good! * EVEN MY CATS LIKE IT!

Ingredients: 

2 cup Raw Unsoaked Pecans
1 Banana
½ cup Fresh Coconut Water
1 teaspoon Cinnamon [or more, to taste]
¼ cup Raisins

Preparation: 

Put pecans, and coconut water in blender, then mix. Add banana [I didn’t even cut mine..], mix some more. Add in cinnamon a little at a time, you might not like the amount of cinnamon used, or you might like more, depending. Mix some more. I added pecans at the end of my blending, but didn’t blend all the way…This left some chunks of pecans, which I wanted. It made for some good texture. After this mix is finished, put in a bowl, sprinkle raisins over top, and serve! :)

Misscutecute: Awesome, glad you liked it!!

Delore: I think the raw oats are a better idea than pecans. I was using whatever I had in the house at that time though..but man, my stomach didn't like me for eating THAT many pecans in one sitting!! I'll try it your way...I'm glad you liked it!!

I used 1 cup oats and 1 cup pecans, even though I don't have the truly raw oats. :( But I felt that was too much in the nut department and its hard to pass up on that wonderful soluable fiber in oats! I left everything else the same and was AWESOME. I slices some strawberries and sprinkled those on top with the raisins. I'm still new to raw but I love this more than cooked oatmeal (which used to be a favorite of mine). Now all I have to do is find some truly raw oats and it will be perfect. Hiya - My understanding of the rolled oats I use are that they are not steamed like regular oats. I order them from Alissa Cohen's website. I have also made cooked oatmeal using these oats and it's incredible (my husband misses my cooked oatmeal). I've made many types of raw nutty 'oat'meals and while they taste great, my tummy always looks like it was someone else's! Raw oatmeal will keep your tummy flat and give you enough energy. I also put a tablespoon of ground flax seeds and that makes it really nutritious and still light. I used to be a serious road cyclist over 10 years ago and wish I knew back then what I know now! :-)

JoyceH...bloating for SURE! I may have a flat tummy, but I looked pregnant after eating this. Ha! Honestly, I was so hungry I was looking to combine ANYTHING. I've never tried really raw oats. Not to sound dumb..but they really are raw? Where do those come from? I don't mean website or store..I mean what source? Anywhoo, it was good and yummy, and fattening :) But I'm training for a marathon in June so I'm trying to get fat into my diet anyway...I'm telling you though...when I went to the gym a few hours later, I didn't have the energy I normally would have. But oh well, one time extravaganza :)

It looks and sounds yummy but 2 cups of pecans for 2 people would kill me (not to mention the scale!). I just soak really raw oats for a raw oatmeal. I also use an apple in lieu of the banana but I'll have to try the banana with the raw oats.

Would there be any reason not to use really raw oats?? They are less fattening and very filling. I always feel great after eating them. I know that a cup of pecans would make me bloated but that's just me. I guess I'm not so lucky :-)
