This is a light, sweet soup. Easy to make and has a warming effect due to the ginger and paprika. It is light and yet satisfying I had it for dinner last night. It is packed with antioxidants and vitamins and has a bright cheery color, enjoy!
6 Organic carrots, peeled and chopped
1 pound Squash acorn or butternut, peeled and chopped
2 Juicy Oranges, Washed, peeled and chopped
1 pint Coconut Milk
sprinkle sea salt
sprinkle ground ginger
Process carrots and squash in the food processor with an s blade. As soon as the mix is a fine chop transfer to the blender, add the oranges and coconut milk and blend until smooth and creamy. Pour into serving bowls and sprinkle with sea salt, ginger and paprika to taste.
