Orange soup

Servings:
2 large bowls or 4 small bowls.This is a light, sweet soup. Easy to make and has a warming effect due to the ginger and paprika. It is light and yet satisfying I had it for dinner last night. It is packed with antioxidants and vitamins and has a bright cheery color, enjoy!
Ingredients:
6 Organic carrots, peeled and chopped
1 pound Squash acorn or butternut, peeled and chopped
2 Juicy Oranges, Washed, peeled and
chopped
1 pint Coconut Milk
sprinkle sea salt
sprinkle ground ginger
sprinkle Paprika
Preparation:
Process carrots and squash in the food processor with an s blade. As soon as the mix is a fine chop transfer to the blender, add the oranges and coconut milk and blend until smooth and creamy. Pour into serving bowls and sprinkle with sea salt, ginger and paprika to taste.

Coconut milk, I think its young coconut juice with the pulp (meat) blended and added in, I do not live in an area where they have coconuts so I order my coconut milk on line from the UK and it comes in a carton.

This sounds really great! When you say coconut milk do you mean brown coconut meat blended or green coconut? I have actually bought unsweetened coconut creme that was great in a couple things but there are so many choices when it comes to coconuts I am always confused and haven't been able to open one myself easily!
