Nori Wraps (nut free!)
Easy, quick, and simple nori wraps that aren't full of nuts. Keep well in the fridge for a day or two - I like to make them to take to work!
5 larger florets of cauliflower
1/2 avocado
2 tsp your favorite hot sauce recipe
1 tsp shoyu/tamari
1 nori sheet
handful spinach
1/4 cup match-sticked cucumber pieces
Chop cauliflower into tiny little bits, like rice (if you have a food processor, by all means use it! Mine burnt out this week so I had to hand chop it). Mash avocado; stir in cauliflower along with hot sauce and shoyu (if your hot sauce doesn't have garlic, I suggest adding a tiny bit). Spread onto nori sheet, then layer some spinach and a strip of cucumber lengthwise on the sheet. Roll up tightly (use a bamboo mat if you have one!), then slice in half. You can slice it into sushi size pieces or eat it like 2 burritos.
Enjoy!
