Microconuts

20-30 small ballsOriginally I had these as “Irish Potatoes” that my catholic friend’s mom made when we were young kids. She used butter, powdered sugar and other nastiness. This is a simpler, raw & tastier version with less guilt in the savory obsession.
Ingredients:
4 cup Coconut Flake
½ cup Agave Nectar
1 tablespoon Cinnamon
Powder
1 teaspoon Cacao Powder
Preparation:
In a food processor grind down 3.5 cup of the c-nut flake 1 min or less, it’s easy to over-process, and the result should be small grains (not powdery sludge). Hand mix in the agave then form 1” balls (add extra agave if it doesn’t hold together). Grind the remaining .5 cup c-nut flake with the cinnamon & cacao until well mixed and roll the balls to coat them. Refrigerate. (Best made under 76 degrees F)
