Maggie's Wedding Cake

keeps for a week in the fridge
Ingredients:
3 large hard apples, grated
1 cut grated carrot
1-2 mangoes, mashed
1/4 lemon, juiced
1 cup sunflower seeds
1 cup walnuts (or other nuts) coarsley chopped
1 cup carob
1 cup dehydrated shredded
coconut
1 cup finely chopped dates
1 cup raisins
1/3 cup dried pineapple (opt) soaked 1/2 hour and cut into small pieces
1/3 cup dried papaya (opt) soaked 1/2 hour
and cut into small pieces
1 heaping tsp cinnamon
Preparation:
mix throroughly by hand and press into a glass pyrex loaf pan, 1 1/2-inch high and refrigerate
