These turned out great. I only had 9 to dehydrate b/c I kept eating the mixture right out of the food processor. They were very good right out of the dehydrator too. We had one left over and stuck it in the fridge to see if it got harder. It sure did! Very good the next morning after being in the fridge. Will make these for the few trick or treaters we may get
kminty u could eat them gooey, but they wouldn't keep their shape and you'd have a lot of ghost on your fingers. it really depends on which u like better: cookies or cookie dough 8)

Heehee, I've discovered that these hold together better after they're chilled, and I've added a tip for making them in a too-short dehydrator (see above).

Next, I have used coconut oil in some macaroons I make all the time, and they never taste anything but wonderful :). I agree that it might be rancid oil. Not all coconut oil tastes the same either. I bought some cheeper oil once and it was awful straight out of the container. I'll never do that again :)
I have used coconut oil to coat dehydrated sweet potatoes chips and in dehydrated-cookie treats as well, and I've never experienced what 3crows is talking about...

I'd like to know more about the coconut oil issue 3crows has brought to light. Anyone else dehydrate coconut oil? I use my dehydrator and cannot recall if I've used coconut oil in such recipes...maybe kiwi is correct in that it was rancid
These look great but I have a question - does anyone else find that dehydrated coconut oil gets a back of the throat vomit taste to it (sorry to sound so gross...) but every time I add coconut oil to my recipes and put them in the D, they get this tangy sicky after taste to them... what am I doing wrong,? I don't dehydrate over about 105 degress so its not that.... any ideas? I so wanna try these but don't want to waste my ingredients if the same thing happens.
silent_advocate - I found raw valencia peanuts in a small health food store (Sweet Pea in Waitsfield, VT). I've also seen raw peanuts at a bigger health food store, Natural Provisions in Williston, VT. I'd check your co-ops or similar stores. Surprisingly, I haven't seen them at City Market co-op in Burlington.
You could also do a search for raw jungle peanuts as I've seen them for sale online at various raw food websites (can't remember which ones) If all else fails, I'd use cashews

3crows- Maybe your coconut oil is rancid. I know mine has tasted like soap when it was past it's sell by date.
