Lettuce Taco

Tasty and fun.

Preparation: 

Buy romaine or other stiff lettuce.

Wash 4 large leaves

Put 2 leaves on each plate

put 1 quarter of an avocado into each leaf

In a large bowl mix

1 cup fresh sweet yellow corn

1/2 cup mung beans

1 tomato

1/2 red onion cut into thin slices the chop

1 cucumber medium -chop

2 med carrots- chop

Salsa

1 tomato

1/2 sm spicy pepper of your choice

1/2 green pepper

1/2 red pepper

1 quarter yellow onion

1tsp agave syrup or to taste

1 bunch cilantro

1 clove garlic

salt to taste

spritz of lemon

make salsa chunky or puree

put equal amounts of veggies into each leaf

sprinkle w/salt and pepper

dribble 1 tsp of apple cider vinegar over each

add a few tbsp of salsa

sprinkle generously with crushed pecans

fold like a taco and enjoy!!

Great with olives too!

looks much better than the raw taco recipe I found in a cookbook. Can't wait to try!
