Khaas Waldorf Salad
A traditional waldorf salad has chicken and mayonnaise in it (ew), so I made my own healthier, almost raw version. I’ve seen that there is a recipe for raw mayo somewhere on here that would probably work in place of the yogurt, but I love that tangy taste against the apples and raisins.
1 cup crisp apples, diced
2 stalks of celery, chopped
¼ cup walnuts, chopped
roughly
½ lemon, juiced
1 sprinkle raisins or grapes
.33 cup yogurt (raw alternative?)
1 handful of your favorite lettuce leaves
Put the diced apples in a bowl and add the lemon juice. Stir well – this will help prevent discoloration.
Mix in the celery, walnuts, yogurt, and raisins.
*Pour over lettuce leaves and enjoy!
I like to take this to work, I just keep the lettuce separate until I’m ready to eat it.

I found the mayo recipe made with avocado, but I haven't got around to trying it yet. If someone wants to try it then let me know how it turns out!

You could blend the avocado mayo recently posted on this website with some pine nuts to get a thicker, yogurty consistency and flavor.

There is a recipe on this website using young coconut, that would be good.

you can make raw vegan yogurt with a number of different fats. ani phyo makes it with almonds (and ferments it in the dehydrator). you can use avocado too... as long as you add some tang to it, it should taste about right.

I just found this while looking for a lunch idea. Lovely. I had to borrow some yogurt so I shared and my neighbor loves it too. I used a mix of red and green grapes. I like the red grapes with this better than the green. Sweeter and tangier at the same time. Wonderful. Thanks.

A true, traditional Waldorf Salad (created at the Waldorf Hotel in the 1800's) is a fruit and walnut salad - no chicken - but yes mayo.
