Hummus.

My daughter would not stop eating this. I had to take it away to save some for later.
It would be nice with a bit of Tahini(seseme seed paste) too.
Ingredients:
1 cup fresh basil
2-5 cloves garlic
2 tablespoon Lemon or lime juice.
½ cup Cold pressed extra virgin olive oil
1 cup Tomatoes. Fresh
1 cup Celery
1 cup Carrot, Grated
2 cup Chick peas , Soaked
24hrs.
pinch Hymalayan pink salt, to taste.
sprinkle Paprika or fav herb.
Preparation:
Blend all ingredience in high powered blender or food processer
Sprinkle top with paprika or other herbs.

I do rinse and change water whenever i think of it. It has been hot here so i did soak in the fridge.

Do you keep the soaking chickpeas in the refrigerator? Do you change the soaking water over the 24hr period?

I dont know bout keeping time. Prob only 1 or 2 days. I love hummus so i usually eat it quickly. Make 1/2 mix if you dont think you will eat it all in couple of days.

How long do you think you could keep it in the refrigerator?

I added this to my recipe box! Looks nice and light. I may only use one clove of garlic for the hubby's sake. Lovely to see some nice light healthy recipes like this every once in a while.
