Healthy Liver Salad

Serves 2This is my favourite salad right now. Add more greens and fresh herbs if you like, mint would be nice. Very cleanising and light on the liver.
Ingredients:
1 Beetroot, grated
1 Carrot, grated
1 Courgette, grated
Dandelion
leaves, 1 handful
1 Onion, thinly sliced
1 Tomato
1 tablespoon Basil leaves
1 Bell pepper (yellow or
red)
1 tablespoon Olive Oil
Lemon juice, 1/2 a lemon
dash Sea Salt
Preparation:
Put all the grated veggies into a bowl and add dandelion and onion.
Blend all the other ingredients with a little warm water to make a sauce. Pour over the salad and mix through. Add some
ground seeds for garnish and cayenne/kelp seasoning. Yumm.

Hello, yes they are bitter, that's why they're good for the liver. However, if you eat only the young leaves as they are coming up,they are less bitter and easier to eat.

Great, healthy salad. I didn't know that Dandelion leaves were so bitter. Is that normal?

Yes, it looks stunning, like coloured confetti! It really is a beautiful salad and has been my staple for days on the trot. I always handgrate finely. Adding a little hummus also adds another creamy element, yum.

I bet this looks really beautiful! Do you hand grate or just use a food processor? I'd probably substitute a cucumber for the squash. This is a very healthy addition that should be seriously considered to add to a persons diet on a regular basis.
