Greek-American Salad
What we in America call a ‘Greek Salad’ is really a lettuce salad with Greek Inspiration. No matter what you call it. it’s fantastic. The secret to this salad is the cultured cream cheese recipe that I posted earlier – allowed to dry out slightly in chunks it’s a pretty darn convincing feta.
1 head lettuce (I like spring mix, of course)
1 cucumber, cut into dice
1 onion, cut into
dice
1 tomato, cut into dice
¼ cup salt-cured olives, pitted
1 pepper, cut into dice
½ cup Real Cream Cheese (it's on my recipe page), put into
small hunks and allowed to dry out a bit
½ cup apple cider vinegar or red wine vinegar
½ cup olive oil
generous sprinkle of oregano, (I like about a
tbsp)
generous amoutn of sea salt and pepper
Mix vegetables together. Put ‘feta’ cheese chunks into the salad. Pour the vinegar and olice oil over the salad, then sprinkle on the oregano, salt and pepper. Toss lightly and serve.
