goji jam and apple fries

Servings:
makes 3/4 cupa great ketchup for your fun fries
Ingredients:
½ cup dates, pitted
¼ cup goji berries
¼ cup water
Preparation:
1.soak dates and berries in water for at least 1/2 an hour to soften.
2.blend until smooth,may need additional water if dates aren’t juicy.
3.serve as ketchup with apple fries(cut apples,sprinkle with lemon juice,cinnamon,nutmeg,date sugar).i use a potato cutter for the apple fries:)
also pictured as filling for a variation of my chia sesame crackers
of course, you can try other fruit as fries like pear,or mango,and play around with the jam by mixing other dried fruit with the dates or sub. fresh berries for the dried ones and water.

hi, everyone...thanks for the comments...Aziah, i cut the cookie shapes after rolling out the raw batter,right on the parchment paper,make even numbers of solid for the bottom cookie and ones with a hole cut-out for the tops. press and wiggle slightly(the cutter, of course)leave the scraps in place while dehydrating.they were dry enough to punch out the cookies when i flipped them.assemble after they are completly dry.i used fondant cutters which come in 3 sizes of the same shape,so the middle cut-out is a flower ,too.

I have my sesame/chia seed mixture soaking and am about to go soak some gojis for those cookies! Any suggestions as to how to use the cookie cutter? do i do it while all raw or dehydrate a while then cut? also, do after you assemble the cookies do you dehydrate again after assembling?
