Frozen Pineapple Coconut Pops

My 6 year old is craving fats lately so I made this for her as a smoothie. I made too much (it was too heavy for me), and poured the rest into popsicle makers. She ate one for breakfast.

Ingredients: 

1 cup Dried Coconut shredded
1 cup Fresh pineapple
1 teaspoon maca, optional
1 teaspoon lucuma powder, optional
1 cup nut mylk, optional
1 tablespoon coconut oil/butter

Preparation: 

Blend the shredded coconut, nut mylk if using (otherwise you can use water), and coconut oil/butter for a while until a ‘butter’ forms. Then add the pineapple and more water for desired consistency. If you are using the maca and lucuma, add those in the end too.

I would say yes, mango would substitute but perhaps with less coconut. Because mango can be stringy, I would blend it really well. I am curious why you don't pineapple, and root veggies for that matter (I learned from another thread). I like learning about why people eat what they eat.

Yes redhouse I love this, I am tryin to get as much MACA into my wife as possible, during her so call MOMMY TIME you know the PMS stage. I wonder if I could trade out the pineapple for mangoe. We don't eat pineapple. What do you think, maybe add a lil agave to kick the sweetness up a notch.
