Falafel Salad

Falafel Salad
Servings: 
2 big salads

I’m using EarthIntruder’s “falafel balls! no dehydrator needed!” recipe. They turned out perfectly, as you can see. This recipe makes 2 pretty big meal salads (for me and my hungry husband!)

Ingredients: 

8 falafel balls
green cabbage, chopped
red cabbage, chopped
apple, chopped
pineapple, chopped
spinach leaves, broken into pieces
3 tablespoon tahini
5 tablespoon olive oil
sprinkle garlic powder
sprinkle parsley
salt + pepper
½ lemon, juiced
sweetener

Preparation: 

Put all the chopped ingredients in a bowl. Top with falafel balls.
Mix last 7 ingredients to make the tahini sauce. I like mine sweet, salty, and sour, but adjust to your liking.
Pour sauce over salad.

I enjoyed this salad immensely. I used the boston lettuce and wrapped it around falafel balls. I tucked in some tahini sauce and tomatoes to finish it off. Perfect! Great tahini dressing recipe!
