Extra Thick Mint Chocolate Chip Pudding

1-2I just used my raw food knowledge to create something delightful, I hope you enjoy it!
Ingredients:
coconut meat from 1 coconut- save the water for your next smoothie
1 small frozen banana- frozen makes it creamy
about 5 mint
leaves
4 small dates- soaked in just enough water to cover the dates
soaking water from the dates
dash of peppermint extract for extra minty-ness
dash of vanilla
extract
1/2 T chia seeds
Cacao Nibs
1/2 T coconut oil- optional
Preparation:
Mix all ingredients together in your blender. then add the cacao nibs for crunchiness
