Dairy-Free Creamed Spinach Dip
This is a raw, dairy-free, creamed spinach dip sure to delight all. It is loaded with spinach and has a delicious creamy taste. Serve with flax crackers or cut veggies. You may just be tempted to make it a meal!

10oz of Fresh, Organic Spinach
1/2 Organic Red Onion
1.5 cups organic, unpasteurized almonds (soaked and
dehydrated)
0.5 cups organic, really raw cashews (soaked and dehydrated)
0.25 cups of organic, cold-pressed olive oil
1.5 cups water
1/3 cup of fresh-squeezed
lemon juice
2 TBSP Nutritional Flakes
4 garlic cloves
2 tsp sea salt
Optional: 1 tsp of psyllim husk (increases thickness of dip)
Chop spinach and red onion and place in mixing bowl.
Put remaining ingredients in blender and blend until smooth.
Combine
blender contents in bowl and mix.
Chill for 1-2 hours to increase the dips thickness.
Garnish with chopped red bell pepper for color.

this stuff is like crack. instead of nutritional yeast, i used 1/3 cup pumpkin seeds and 1/3 cup pinenuts to add that cheesy flavor. it's ridiculously good though and i can't wait to serve it to everyone for easter.

Mine is solidifying in the fridge right now! I used a whole avocado and 1/4 cup hemp oil. I also doubled the nutritonal flakes for a little bit thicker consistency. Don't know how it tastes yet but it sure looks good:)

Hi! I made this for my daughter's 3rd birthday party, and everyone really enjoyed it. It was the 'something different' appetizer, and even those who are used to creamy spinach dip loved it. It has the right balance of all the flavors. Nothing overwhelms the other players. Thanks for sharing, and yes, we just may make it into an entire meal! (Judging by the amount my husband scoops onto crackers...).

I don't have a fancy dehydrator yet, just an inexpensive WalMart variety (a round one). It works fine for nuts and seeds . . . takes a bit longer, but is worth it to me. I just use unbleached paper towels to keep smaller seeds from falling through.
Another idea, considering where you live, would be to dehydrate nuts on the dashboard or in the back windshield of the car. It's warm enough right now in your area of the country to dry nuts and seeds. You'd probably want to use an oven thermometer to be sure you don't "cook" them. I've done a little dehydrating that way when visiting in sunny Florida.

I'm anxious to try this but, for the nuts... Soaked and dehydrated? Why not just use them raw? I don't have a dehydrator that's why I ask ; )

Made spinach dip this evening. I have a habit of making just enough for myself, because I am the only raw eater in the family. However, I need to break this habit, or stop giving out samples! It was a hit and yes, it was a little gritty, but after adding the onion and spinach it really didn't matter much. It really does need to be refrigerated before eating. My consistency was fine, it just wasn't as delicious room temp. Thanks a bunch!
