Curry sauce Masala

2I do love my curries! This reminded me of tikka masala sauce and it was quite thick and creamy.
Ingredients:
3 tablespoon pine nuts
6 brazil nuts
1 cup water
1½
red peppers
½ onion
3 plum tomatoes
3 dates
1 clove garlic
1 teaspoon fresh ginger,
grated
1 tablespoon garam masala
1 teaspoon mild curry powder
1 sprinkle turmeric
1 sprinkle chilli
powder
1 sprinkle cumin
1 lime juice
Preparation:
Blend all ingredients together.
I mixed the sauce in with processed cauliflower florets for rice and added in some chopped red pepper, onion, yellow tomatoes and peas to give it plenty of chunky bits.
The ingredients may not be exact, you might want to play around with the quantities!

I've had this on my favorites list for over a year and never made it. I came across the recipe again the other day and Im so glad I did - its delicious! So good that I've made it twice in the last 3 days! Two of my good friends have also enjoyed this curry. I served it with dry, shredded jicama as "rice." Thank you!!
