Curried Tomato and mango
Curried Tomato and mango
Servings: 
serves 1 or 2

Delicious, juicy, sweet and ligltly spicy. I found the idea to sprinkle curry powder over tomato and mango on a french non-raw blog (http://drole2bouffe.over-blog.fr/). Then I invented this recipe around this idea, adding a vinaigrette and fresh basil.

Ingredients: 

2 large tomatoes, cut in nice big pieces
1 mango, peeled and cut in pieces
1 tablespoon lemon juice
2 tablespoon orange juice
1 tablespoon olive oil
¼ teaspoon curry powder
1 pinch salt (optionnal)
freshly ground pepper (optionnal)
5 fresh basil leaves, chopped
calendula petals for garnish (optionnal)

Preparation: 

Put the tomatoes and mango on a plate, mix the vinaigrette ingredients together (lemon and orange juice, olive oil, curry powder, salt, pepper, basil) and pour over the tomatoes and mango. Garnish with more fresh basil and some calendula petals if you are lucky enough to have some.

*Beany* I live in West Central Georgia (USA). I found the link to Crue's personal website on her Profile. But, alas, the website is in French, and I only speak "Southern". There are 6 or 7 recipes posted there with absolutely gorgeous pictures. She's now posted 3 of them here on GoneRaw. *Crue* thanks so much for sharing with us here on GoneRaw. At the risk of sounding redundent, I think this one would also lend itself well to a smoothie.

Just made this last night - absolutely delish!! I used lime juice instead since I didn't have lemons or fresh oj, and it still came out fantastic! Thanks!
