Curried Pancakes
Theses are great with just about anything. I put veggies in mine and wrap them up or just grab a few to munch on while on the run. Everyone who’s tried them love them. They are actually a variation on the curried crepes from the cook book RAW by charlie trotter and roxanne klein. The recipes from the book are to die for but extensive ingredient list.This was my take after I left the crepes in too long. Now I make them all the time as they keep well.
1 cup flax seeds
1 cup unsweetened shredded dried coconut
1 teaspoon curry
paste
½ teaspoon freshly ground turmeric
½ teaspoon celtic sea salt
½ teaspoon freshly ground cayenne pepper
1
tablespoon freshly squeezed lemon juice
2 cup filtered water
In a high speed blender or food processor, combine all the ingredients and process to form a smooth batter with the consistency of thick cream. Spread the batter in 8 inch round circles on Teflon dehydrator sheets and dehydrate for 4 hours or more at 105 F. They should be pliable and easy to handle when dried.
Using golden flax seeds produces a more golden pancake and grinding up the flax seeds before hand is helpful in giving a smoother cream consistency.

writeeternity see above. I sub curry power all the time for paste and if your not a huge curry fan just decrease it and taste the batter before you make it to see if you like it. Good luck!!

Pam, no about two pancakes per tray. Really it's up to you, I've done smaller ones and larges ones depending on what I want to do with them.
Jenny the Polenta was GREAT! The Dragon Crackers are fantastic! Everything I've tired out of that book so far made me drool!
Riversanctuary, sure just increase your curry power instead of the paste. Paste is much stronger than the power. I've sub'ed it before and it was fine.

I was wondering about sub'ing curry powder for curry paste too--is curry paste thai (so different flavors than the powder?). Ready to make this--it sounds delicious!

Ooh! I've been wanting to try the polenta, too. How did it turn out? I love that book, it is so beautiful. I'll definitely give the dragon crackers a try, too!

Do you know if curry powder would work as well as curry paste? Have you tried other spices? I'd like to try this but I am worried about too much of a curry flavor. Thanks!

PS GUYS I forgot to tell you that I found grinding up the flax before hand is helpful as once that water hits those guys they form a goo!

jenny, these are great, what I like best is they keep for a bit so I can take them to work, munch on the road on them, even my non raw friends like them. I changed a few ingredients from the book in this recipe, it's my take, but if you get a chance get the book. Their recipes are all divine, but just be prepared to work and spend some time in the kitchen. I did their raw polenta with wild mushroom ragout, spicy corn soup and chocolate geleto for a dinner party and I was in the kitchen working for six hours!! LOL I made their dragon flax seed crackers and I cannot keep them in the house because my friends keep wanting bags of them home!!
