Cucumber Spinach Round Dance

Cucumber Spinach Round Dance
Servings: 
Serves 2 hungry persons

Today is everything about going green. We are here also on top of the movement! ;)

Ingredients: 

3 cup Sliced cucumber
½ Green Pepper
3 cup Sprouted buckweat
2 cup sspinach leaves
1 clove garlic
3 tablespoon olive oil or any other
1 tablespoon fresh squeezed lemon juice
1 cup parsley or cilantro or basil
1 pinch salt

Preparation: 

Slice cucumbers and pepper. Serve on a spinach leaves.
Green mousse preparation:
Blend buckwheat, some spinach (or kale), garlic, salt, lemon juice, and olive oil.
Shred herbs and add to mousse. Mix and serve on prepared spinach leaves and slices of pepper.
Enjoy this green delight.

i also tend to stay away from grains, just a preference, but buckwheat is technically a fruit :)

layladebloody, yes, you can easily replace the buckweat with any seeds or nuts you like. Sprouted Sunflower seeds or pumpkin seeds will work great here! Or you can try avocado guacamole type souse.

I can't eat grains but this sounds really good...do you know a good replacement for the buckwheat?

I hope you know how impressive this is... five stars from here to the moon. This would be perfect for a party. It reminds me of a green version of a deviled egg platter! Bravo!
