crisp bacon (and eggs)

crisp bacon (and eggs)
Servings: 
2 or 3 excalibur dehydrator sheets

try the bacon, but not the eggs(they belong to my parrot)

Ingredients: 

1 medium eggplant, sliced thin, lengthwise
1 tablespoon paprika
1 tablespoon smoked paprika, not raw
2 tablespoon apple cider vinegar
2 tablespoon sunflower oil
1 tablespoon agave
1 teaspoon garlic powder
½ teaspoon salt, or to taste
1 tablespoon water, or a little more to thin mixture

Preparation: 

1.mix all ingredients ,except eggplant.(I used an electric food slicer for uniform slices.)

2.brush sliced eggplant lightly with mixture ,add water to mix as needed.(I used my fingers , but a pastry brush works well.)

3.lay on parchment covered mesh dehydrator sheets. I split the wide end of the eggplant an inch or so vertically in the middle and overlapped it to create straight slices…hope this helps:)

4.dry at 115 degrees till crisp.mine took about 12 hours as they were very thin.

for canadian bacon(pictured on the bacon cheeseburger in my chili-lime fries recipe)and here or bacon bit variation : use jicama

1.thinly slice jicama into rounds,or 1/4 dice.

2.coat with a mixture of 2 tablespoons sunflower oil,1-2 tablespoons smoked paprika,1 teaspoon garlic powder,1 tablespoon agave,and 1/2 teaspoon salt.

3.dehydrate until crisp.

these have the taste and texture of bacon!

hi carrie6292....if you are going to buy anything new,you may want to try an electric food slicer...they are awesome!more versatile and costs less than a good mandoline... you can get a small folding one for less than $30! also JCPenny has nice ones for less than $50! you can slice a whole dehydrator of veggie chips in minutes!the blade is much bigger than any mandoline,once i had a 7" (across!) "jicama-zilla" i could never have sliced that on my mandoline;) i find using it safer than a mandoline,and you can get TOO thin,when i dehydrated some squash they turned out like tissue paper!

Okay, my mandoline doesn't slice that thin... can anyone recommend a good brand of mandoline? This looks great! I bet it would come out great with either yellow squash or zucchini too... thanks!

hi everyone...thanks for the nice comments...queenfluff,i first bought a small jar of the smoked paprika in the supermarket,right next to the regular one,and then i found a large jar, for less cost than the small one, at sam's club wholesale club.

great job! zuchinni works well too. they serve it at Julianno's in Santa Monica but i believe it is only soaked in tamari. your marinade is awesome;o)
