Creamy Cucumber soup

Servings:
Serves 4This is very refreshing on a hot day and so simple to make.
Ingredients:
2 cucumbers, peeled and chopped
1 cup cashews, soaked
5 sprigs chives, cut into small pieces
2 clove garlic, minced
1 cup water
¼ teaspoon sea salt
Preparation:
Combine ingredients in a blender. If you want, save a few pieces of chives for garnish.

This is an awesome recipe! Tried soaking almonds & walnuts for this, but without success. Think I'll stick with the cashews, although I may try macademias next. I also added dill and some pico de gallo that I had in my fridge. Gave it that extra ummpph.

I have read various books that say 2-8 hours or overnight or not at all. I personally soaked my soft nuts (cashews, pine nuts, etc.) for an hour or so, to soften them up a bit.
Can you explain the rating system to me. I noticed I received stars on some of my recipes but I didn't do it. How do you rate recipes. Thanks.

In the picture this looks really creamy and delicious... I haven't tried making this, but I've attempted similar things and they come out too watery. I'm excited to try this. :)
