Cream of Pecan Delight
Creamy dreamy, savory, pecan casserole! Can be served warm or cold!
1 cup soaked pecans
3 green onions chopped
1 sweet potato spiralized
3 stalks of
asparagus chopped
¼ cup hazelnuts or pecans, meal
2 tablespoon soy sauce, chick pea miso, or braggs
1 sprinkle dry mustard
sea salt and pepper to
taste
1 collard leaf ripped for garnish- optional, spinach would work too
¼ cup mixed sprouts (lentil, pea, bean) garnish optional
Blend hazelnut chick pea miso, dry mustard, pepper and sea salt with water ( appx 1\2 cup) to make sauce.
Spirolize sweet potato and treat with lime and water. Rinse and squeeze water out before combining with rest of dish.
Pour cream sauce over the top and mix in with noodles. Add pecans and vegies and toss. Enjoy!
For extra garnish raisins, red pepper, raisins and marinated mushrooms might be nice too.

Hi The potato is soaked in lime juice to make it less starchy. I liked it but it may be an acquired taste. I also added this to miso soup the next day and it was pretty good.

looks great! espacially spirilized potato. how are potatoes raw? i had a thought it only good if it cooked? what is your insite?
