Chocolate coconut truffles with cacao nibs for a healthy boost of antioxidants. Everytime I make these, they are gone in a jiffy. These are light and delicious.
1 cup Dates
2 tablespoon water
2 teaspoon vanilla extract
2 tablespoon ground cacao nibs
pinch kosher or sea salt
.3 cup shredded coconut (unsweetened)
2 tablespoon raw coco powder
½ cup nuts (pecans, almonds, macadamia, etc)
Place all ingredients, except coconut, in blender until you get a doughy, chewy consistency. Add water or coco powder to adjust. When done, roll into balls and dust with cocnut shreds.
Eat with strawberries for a fresh chocolate and fruit treat!
