I tried to make a sauce from Rawsome by Brigette Mars for Mac N' Cheese. I was short a few ingredients and made some changes. What I ended up with was a rich and complex curry sauce that has a cheesy flavor and a subtle curry punch. Its fantastic and goes with just about anything. I used it in cabbage rolls and threw it over veggies. Plus I made zucchini noodles and had what I like to call Mac N' Cheese with a twist. YUM!!
1 cup Macadamia nuts or Cashews (I used mostly macadamia nuts and threw in about 1/4 cup cashews)
½ cup raw sunflower seeds
1 cup water
¼ cup soft sundried tomatoes (soak if necessary)
Scant ¼ cup white miso
1 teaspoon turmeric
½ teaspoon curry powder
Process all the ingredients together in a food processor until smooth. Add more water to thin if desired.
