Cheese with Spring Onions
The easiest, creamiest and tastiest cheese ever! Just takes a few minutes to make. Our 2nd best seller on PurelyRaw.com.
2 cup sunflower seeds, washed and soaked
1 cup pine nuts
2 lemons, juiced, all lemons are different alter to your own
taste
.33 cup raw olive oil
1 bunch of spring onions (aka green onions)
½ tablespoon raw salt
Nut Free Option: Use 3 cups of Sunflower Seeds and no Pine Nuts.
Pre Prep: Wash/rinse the Sunflower Seeds very well and then soak in good water for at least 4 hours, 6 is better. Rinse and shake dry in your strianer or allow to air dry for a while.
In your food processor process the dry ingredients (sunflower seeds, salt and pine nuts) until a fine meal.
Then add the lemon juice and olive oil. Process again until smooth, Scrape off sides as needed. Get it so it is rolling as it moves around your processor.
Process until smooth yet very thick. Dont be scared to let it go for ages, the longer it goes the creamier it is. Then at the end add the Spring Onions and process slightly to break them into the cheese.
Allow to stand for 30 mintues. If you taste it while it is being made or right after, expect the lemon to stand out. It dies down after it has sat for a while.
You can shape into cubes or balls and dehydrate for a while to get a firmer cheese for cheese salad, feta etc.

rachel what brand is your blender it sounds tougher than a vita mix!
jsorensens2 thanks;) you could make it cheaper by reducing the pine nuts and adding more sunflower seeds, I haven't tried it though, it would probably taste just fine.

Zoe - this is a fabulous recipe! It is fast, easy and really delicious! I mmm and ahh every time I eat it. I made little clumps of dehydrated cheese for my salad too and oh boy it is great! It sure makes a lot, so I cut the recipe in half. Pricey with the pine nuts, but I hate to change it - it's so good in it's original combination. Thanks!

Yes!! I love that show. I'm a big fan of the Zuko and Katara pairing, lol. Do you know why they stopped playing it on Nickelodeon in the middle of Season 3? or is that supposed to be a cliffhanger? I wish they'd start playing it again!!

Zoe - I've actually done a lot of recipes meant for food processors in the blender...I guess it's pretty tough cause it hasn't broken yet, lol. It has this button where you can pulse it instead of letting go for a really long time, and I move the stuff around with a spoon a lot.

oh she is gorgeous just like Tonka was when he was a kitten. He lived curled up in my hand for about a week when I first got him.

Zoe - yep, I used a blender, and a 21 year old one at that. I'm surprised it even works at all, haha. I was too lazy to get out the food processor, but next time I'll make sure I use it.

This sounds yummy! Can the pine nuts be replaced with another type of nut? They are very expensive here...would cashews work, or take away from the taste?

Rachel-akiko - I'm a bit alarmed at your comment, did you try to make it in a blender?? This is a recipe for a food processor, I'm not surprised your blender burnt out! Glad you liked it, I love the feta cheese taste too, I really did miss that. I like to put small balls of it in the dehydrator and have a warm cheese salad. Blisss.

This was delicious. I dumped a bunch in a huge salad of mixed baby greens. It was a lot thicker than I thought it would be, and letting my blender "go for ages" caused it to overheat!! :( Still delish, though.

Hi elizabeth, it keeps really well because of the salt and the oil in it. If you keep it in the fridge it's ok for up to 3 weeks (!!) We leave it out on the counter top and it is fine for a week.
