Recipe Directions

1. Put the cashews in the food processor and process them.

2. Add the 2 bananas, maca, and mesquite powder. Process all until smooth.

3. Put in a bowl and set aside.

4. Process the raspberries with the cut up dates until smooth.

5. Scoop seeds out of half the melon and make melon balls. Can get easily done with an ice cream scooper.

6. Arrange on plate with nut-banana pudding in the middle, melon balls around, and drizzle the raspberry sauce over it.

I've made the banana pudding today, adding a hand full of dried tart cherries and some cocoa nibs... I'm still nibbling ;))

Guess there could go all kind of things in there... :)

Is that 1 cup or 1 1/2 cups cashews?

Hi there, it is 1/2 cup of cashews. It was not easy to add it this way into the recipe line. Enjoy eating it, its one of my favourites! :))

Oh, this looks so good! The colors are beautiful. But I'm going to have to pass on the maca powder. What could I replace it with? Would psyllium husk powder work?
