Carrot Toona Salad
This tastes fabulous! Even my non raw mom said she liked it better than regular tuna salad! You can even make sushi rolls with it. I got the recipe from my friend Rashimba who makes it at the Food Co-Op were she works. It can be a totally raw recipe if you make your own raw mayo, but I love the Veganaise.
carrot pulp from juiced carrots
a few tablespoons of carrot juice to add back in, but don't make it too wet (the carrot juice tastes great with the
mayo)!
dulse flakes
dill weed (fresh or dried)
red onion (makes a huge difference in taste compared to using other onions)
red bell
pepper
celery
Veganaise (I like the one with organic grapeseed oil) OR make your own raw mayo
a squeeze of lemon juice
sea salt
I don't measure anything. I just go by sight and taste. You can't mess this one up. Just keep adding ingredients until it tastes the way you want it to. I add quite a bit of dulse and dill to mine. The dulse and lemon juice are what make it taste like tuna salad (the kind with the relish added)!

Thanks Kendra for sharing this. A lot of carrot toona/pate recipes call for nuts and seeds. This is a wonderful alternative.
8. Veganaise is vegan kosher
Veganaise is vegan kosher mayonaise made from expeller pressed oil, fitered water, brown rice syrup, apple cider vinegar, organic soy protein, sea salt, mustard flour, and lemon juice concentrate.They sell organic and non-organic versions and a versions with grapeseed oil, or canola, or soy. It's kept in the refridgerator of health food stores. Hope that helps.

10. I just decided to make some
I just decided to make some more of this with the carrot pulp I saved for carrot pudding after I posted the recipe. The carrot pulp has a little carrot juice in it. When I mixed the mayo in, the carrot juice and mayo taste fabulous together! That's just a lil' FYI!
