Carrot Cake Balls

About Ten CookiesYou don’t have to roll these into balls. I imagine they’d taste just as well taking the form of cake.
Ingredients:
2 Large Carrots
½ cup Walnuts
¼ cup
Pecans
¾ cup Raisins
1 tablespoon Agave
1½ teaspoon Cinnamon
½ teaspoon
Nutmeg
.125 teaspoon Salt
1 tablespoon Flax (optional)
½ teaspoon Lemon Juice
Preparation:
Grate carrots into mixing bowl. Crumble nuts in and add everything, mixing together. Shape into messy little balls and place in the dehydrator. Use teflex if you’ve got it. I’m unsure about the dehyrdrating time, since my cheaper dehydrator doesn’t have a thermostat. Take them out once the outside is dry. :)

Yummy! I made a couple small changes. I used all walnuts (3/4 cup in total). Instead of agave I chopped 5 big juicy dates. I omitted the flax and added double the lemon juice. The two carrots that I grated measured approximately 2 1/4 cups altogether. They are dehydrating as we speak, though I was tasting them as I mixed them (with my hands). Such an easy and satisfying treat!
