Blackberry and Lemon Macaroons

Ingredients:
2 C unsweetened coconut
.5 C almond flour
.25 C coconut oil
.5 C liquid sweetener
of choice (clear agave, maple syrup)
.33 C mashed blackberries
1 T lemon juice
few drops of lemon essential oil (could use extract)
zest from one
lemon
dash of sea salt
Preparation:
In a large bowl, combine all ingredients. Using a small scoop, scoop out mixture and place on dehydrator tray – dehydrate for 4 hours at 105. Check often to make sure not to over dehydrate. Also, you could use your oven on the lowest setting, but check every 10 minutes not to over dry!

1. I made these with some slight
I made these with some slight changes - hazelnut flour rather than almond. My non-raw coworkers love them. I dehydrated a second time when they started to get sticky.
