Beet and Cucumber Salad

Refreshing Beets and Cucumber Salad with amazing Pumpkin Seeds Mayonnaise
Ingredients:
1 cup Sauerkraut
1 large Beet
1 Cucumber
1 Chili Pepper
½ bunch of Green Onion , (4-5)
1 teaspoon Thyme
¾ cup Pumkin Seeds Mayonnaise, see Recipe above
Preparation:
Dice cucumber….Grind beet….Chip pepper and dill….Mix all together and garnish with greens and or avocado.
